Jesus didn't let them get away with these words. He knew they didn't believe what they were saying. The scripture says that He knew their thoughts. They didn't like seeing the crowds follow Jesus because that meant the people weren't following them. Jesus informed them if they talked against Him it would be forgiven, but talking against the Holy Spirit wouldn't be forgiven. It's the unpardonable sin.
Now, if people are doing this in ignorance, that's one thing. However, the Pharisees knew the truth and deliberately ascribed the work of the Holy Spirit to Satan. See Hebrews 6:4-6.
How do people get to the point of committing this unpardonable sin? They sear their conscience by going against it. They become desensitized to that inner warning system. Matthew 12:33-37 tells us a tree is known by its fruit, and we are known by our words. If you're sinning with your mouth, your conscience will condemn you. II Timothy 1:3 - apart from a clear conscience faith is hindered.
